Ok I changed the interval but also figured out the reason why it wasn't sending data was because I used my username for Weather Underground instead of my station ID. This is different I think. It's a good idea, and I'll consider it, for the 'tmp' files at least. It should probably have been done that way in the first place, instead of creating files with 'tmp' on the end at all.

There's only one step, fill in the details correctly that correspond to your MySQL server host, account and database. If you've done it correctly, then perhaps your server does not allow connections from other hosts.

The currentconditions.txt file is for you to set by whatever means, from a source external to Cumulus (or by typing it in yourself on the Cumulus main screen) - see the wiki for details.

What kind of "current conditions" are you looking for from your VP2?

Using DDNS loads the page and the clock ticks by, but I never get any data displayed. Both ports 8998 and 8002 are forwarded to the W10 PC running CumulusMX. As the OP found, this should be sufficient. Is it just the pages which use web sockets (dashboard/now/gauges) which don't work, or all of them?

I believe you turn off uploads to weatherlink.com using the logger's browser interface. You then just need to set the periodic disconnect interval in MX to zero.

30 seconds is rather long. It means that MX isn't getting any data for 50% of the time. The best solution would be to turn off uploads to weatherlink.com! A future build of MX may include code to retry logger connections, so that would allow a smaller value for the disconnect period - MX would just ...

You have a problem with the TCP/IP connection to the logger, it keeps being closed down. MX has no code in it to recover from this. You won't be able to do that with the graphs created by Cumulus, as only Cumulus can control the parameters; you would have to create your own graphs by some method, e.g. using Highcharts.
