I woke up today to find that the lowest pressure reading was 920mb,
I have manged to change this to a more realistic reading, but it is still showing in my May monthly record.
Where is this data stored, so I can change it?

It’s in monthlyalltime.ini, but you can use the built-in editor in Cumulus to edit it.

...unless you mean the highs and lows for the current month, in which case it’s in month.ini, and I can’t remember whether there’s a built in editor for that.
