Ive since managed to get it to read data back to 19/01/2011 by looking at the diags file and finding that date in it, then placing that into the timestamp of the today.ini. It used to go back to the 29th of December 2010, however.

There does seem to be a period between April 24th and May 11th that simply isn't there. I've no idea why it just seems to have stopped logging???

The diags files are plain text. I'm not sure what it is you think you'll find there; you can put any date and time you want into today.ini and Cumulus will ask the logger for the data since that point. But I've already told you that there is no data in your logger from before April 3rd, so that's as far back as you can go.
